Microsoft recently released a new update for Outlook for iOS app to Insiders. This v3.12 update brings support for Calendar category colors. Outlook for iOS app now allows you to set category colors on your Office 365 account and these colors will be now reflected in your calendar too.
You can download this update from TestFlight app from your iOS device.
